Ingredients
- Olive Oil 1 tablespoon
- Onion 1
- Celery stick 2
- Carrots 2
- Apples 4
- Curry Powder 1 tablespoon
- Bay-leaf 1
- Chicken stock 1L
- Salt, pepper
Method
- Peel and finely chop the onion
- Wash and dice the celery sticks
- Wash, peel, we-wash and finely chop the carrots
- Wash, peel and chop the apple
- Heat the olive oil and add the chopped onion, celery and carrots. Cook it together for about 8 minutes, until they soften.
- Ass the bay leaf, curry powder, salt, pepper and mix it together with the rest of the ingredients. Then add the apples and the chicken stock.
- Simmer for about 20-25 minutes until all the ingredients have softened.
- Remove the bay leaf, and blend the soup.
- Put it back to the heat and let it simmer for about 5 more minutes.
Note: You can serve this soup with sour cream or Greek yogurt on top. It can be kept in the fridge for 2 days.
